This course introduces students to the fundamentals of menu design for a range of food-service settings, examining how resources, demographics, market demand, and operational factors shape menu decisions. Students study truth-in-menu guidelines, legal considerations, and descriptive terminology. Topics include menu layout, design, pricing, and sales mix, and students critique and create à la carte, table d’hôte, and specialty menus that meet industry standards.
