This course builds on the foundational skills developed in Culinary Techniques I, advancing students’ proficiency in classical and contemporary cooking methods. Through continued demonstration and hands-on lab work, students develop refined knife skills, station organization, and heat-based techniques while producing a wider range of composed dishes. Emphasis is placed on accuracy, flavour development, plating fundamentals, and the ability to work efficiently within the kitchen environment.
